Abre Ojos Tequila is made from 100% blue Weber agave, harvested at peak maturity and roasted using a traditional brick oven method, which imparts a rich and complex flavor to the tequila. The brand's small-batch production process ensures meticulous attention to detail, resulting in a premium and handcrafted tequila that stands out for its taste, aroma, and smoothness.

OUR PROCESS

Abre Ojos Tequila is made using a meticulous and traditional process that involves the following steps:

  1. Agave Harvesting: The process begins with the careful selection and harvesting of mature blue Weber agave plants, which are grown in the Jalisco region of Mexico. The agave plants are typically harvested when they are 5-10 years old and have reached peak maturity, ensuring the best flavor and sugar content.

  2. Roasting: Once harvested, the agave piñas (hearts) are slowly roasted in a traditional brick oven, also known as a "horno." This slow-roasting process helps to release the agave's natural flavors and sugars, giving Abre Ojos Tequila its distinctive taste profile.

  3. Milling: After roasting, the agave piñas are crushed to extract the juice or "aguamiel," which is then fermented. Abre Ojos Tequila uses a mechanical shredder, which insures that all agave liquid is extracted.

  4. Fermentation: The agave juice is then fermented using natural yeast, allowing the sugars to convert into alcohol. This process can take several days and is closely monitored to ensure optimal fermentation and flavor development.

  5. Distillation: Once fermentation is complete, the agave juice is double-distilled in stainless steel pot stills, which helps to refine the flavors and remove impurities. The first distillation produces "ordinario," which is then further distilled to produce the "tequila" or "blanco" spirit.

  6. Aging (optional): Abre Ojos Tequila offers different expressions, including a blanco (unaged), reposado (aged for at least 6 months), and añejo (aged for at least 12 months). For the reposado and añejo expressions, the tequila is aged in oak barrels(used whiskey barrels), which adds complexity and depth to the flavor profile.

  7. Bottling: Once the tequila has aged (if applicable), it is carefully blended and then bottled in distinctive, hand labeled bottles that reflect the brand's premium positioning.
